RECIPE - HONEY GLAZED CARROTS
Really tasty and great to take to a pot-luck if you have plenty of carrots in the garden.
450 g carrots, peeled and sliced lengthways
2 tablespoons unsalted butter
2 tablespoons honey
¼ cup water
salt & pepper to taste
freshly chopped parsley for garnish
Peel the carrots and slice them lengthways into long thin even slices about 1/4 inch thick. In a large frying pan melt the butter over medium heat.
Add the sliced carrots and saute for about 3-4 minutes until they start to slightly caramelize. Pour the honey over the carrots and stir to coat.
Add the water to the pan and bring it to a gentle simmer.
Reduce the heat to medium low and let the carrots simmer in the honey water mixture. Stir occasionally, ensuring the carrots are coated in the glaze. Let them cook for about 10-11minutes or until they're tender and the liquid reduces to form a glaze.
Season the honey glazed carrots with salt and pepper according to taste. Stir to combine. Garnish with fresh chopped parsley, if desired, for a pop of colour and added flavour.
