RECIPE - CHOCOLATE TRUFFLES
Quick, easy, and a winner with everyone, especially with good coffee.
300 g dark chocolate
1 tab milk
2 tabs brown rum, brandy, whisky, Cointreau – your choice!
100g unsalted butter
3 egg yolks
Cocoa
In a double boiler, melt the chocolate with the rum and milk. When three-parts melted, add the butter and stir until just melted.
Off the heat, stir in the egg yolks, then put the mixture into the fridge until firm. Stir once or twice while cooling or the butter will rise to the top. When the chocolate is firm, but still workable, shape into rough-edged balls to resemble truffles and roll lightly in cocoa.
Dust off any excess cocoa.
Store in the refrigerator in a covered container.
