CHOCOLATE ICE CREAM

This is dead easy, quick, very smooth, and gives that delicious homemade taste.

50 g castor sugar
4 tabs water
150g good dark chocolate
3 egg yolks
225 ml cream

Put sugar and water into pan and bring gently to the boil, then simmer 2 – 3 minutes.

Break chocolate into blender and add the sugar & water syrup.

Blend until smooth.  Add yolks and blend again.

Lightly whip cream and fold chocolate mixture in gently.

Cover tightly and freeze.
