Dressing for Pumpkin
This recipe has been passed down through several generations who have valued it for its ability “to transform a simple pumpkin/butternut/buttercup serving into something special”. 4-5 servings.
Mix & heat to combine in microwave 15 g butter, 1teaspoon curry powder, 1 teaspoon honey. Pour over cooked pumpkin.
Optional: sprinkle with toasted pumpkin seeds, long thread coconut, and/or 2 tablespoons of sultanas or raisins. This dressing can be made a day or two ahead and refrigerated, heating in microwave to melt.
It's easy to double, treble or quadruple for larger gatherings.
