GRAPEFRUIT VINAIGRETTE

“This simple grapefruit vinaigrette is particularly good on salads, including salads of chicken, avocado, feta, & dried fruit & nut type ingredients. It brings a different zing than other citrus & it’s a simple way to use surplus grapefruit.” Sarah Ellem, New Plymouth.

Ingredients

½ cup freshly squeezed grapefruit juice, (about one large) plus this if you like.

1½ tablespoons red wine vinegar (the red makes the dressing a lovely blush colour).

¾ teaspoon good salt.

3½ tablespoons good runny honey.

¼ teaspoon onion powder.

¼ teaspoon garlic powder, (or use fresh, crushed, if preferred).

Pinch of sumac optional.

1½ cups vegetable oil (or use canola or any other neutral oil). 

Method

Combine all ingredients in a lidded jar and shake well.                                                            

Or use a blender if preferred. Store in fridge.
