MISFIT GARDEN’S FEIJOA FRITTERS

Taupo chef & gardener Sofia Dekovic devised these for Misfit Gardens, a fresh fruit & vege subscription box that fights food waste by rescuing misshapen fruit & veges that would otherwise go to waste. Quirky & misshapen still means delicious!

Ingredients:

6 large feijoas
1 egg
50 g butter, melted
¾ cup milk
1 cup self raising flour
¼ cup corn flour
Oil for cooking
¼ cup caster sugar
1 teaspoon cinnamon

Method:

Cut feijoas into circles, aiming for around 1 cm thickness, leaving the skin on.                    

In a large mixing bowl, whisk together all your batter ingredients until it forms a thick batter. Pop the feijoas into the better and coat generously.

In a frying pan or large saucepan add the oil until about 1 centimetre deep and heat over a medium heat.

Make sure the oil doesn't get too hot; if you drop a little bit of your batter in there and it starts to bubble gently then it's perfect.

If the oil starts to smoke then it's too hot; turn down the heat and wait a while.                  

Fry the feijoas rounds in batches. Once bubbles appear around the side of the fritter and the bottom is golden brown, flip them over and cook the other side. It usually takes about two minutes per side. Once cooked, drain on paper towels and keep making the other batches. 

In a large mixing bowl, add the sugar and cinnamon.

 Throw your freshly fried fritters in there, toss them around until coated and enjoy!
