ZUCCHINI, CAULIFLOWER, & CUCUMBER RELISH
This is a favourite old recipe handed down through the generations.
1 zucchini, seeds removed and sliced into small pieces
1 medium cauliflower, cut into small pieces
1 cucumber, seeds removed and sliced into small pieces
2 onions sliced
salt
2 cups sugar
1 tablespoon dry mustard
1 tablespoon turmeric
White vinegar
2 tablespoons cornflour
Place chopped zucchini, cauliflower, cucumber, & onions in a plastic bowl & leave overnight.
Drain off liquid & place ingredients in a large saucepan.
Add sugar, mustard, & turmeric.
Pour over white vinegar to just cover the veges. Simmer for 40 minutes.
Mix the cornflour with a little vinegar & add to the pot.
Cook through, stirring, until thickened.
Pour into sterilised jars & cover with lids. Leave for 2 weeks before using.
