EGGPLANT LASAGNE

These make a great substitute for pasta sheets in lasagne.

To prepare the eggplants, cut 1 cm slices and lay out with a sprinkle of salt, leaving for 20 minutes. Pat dry with a paper towel.

Drizzle with oil & bake at 200° for 20 minutes, or until browned and caramelised.  Use as substitute layers for sheet lasagne.
