PUMPKIN MUFFINS
Recipe from Mary Edwards in Christchurch who relies on her own compost, sheep pellets, & an occasional dose of seaweed liquid. Pumpkins are just coming into season.
Ingredients:
225 g butter
1 cup raw sugar
4 eggs
1 cup cold mashed pumpkin
2 tablespoons golden syrup
2 cups wholemeal flour
2 teaspoons baking powder
1 teaspoon nutmeg
1 teaspoon mixed spice
½ cup sultanas
Method:
Prepare muffin tins by brushing with oil. Cream butter and sugar. Add eggs and beat well. Add pumpkin and golden syrup. Add flour, baking powder, spices & sultanas. Bake at 180° C for 15-20 minutes. Cool on cooling rack for 10 minutes before removing muffins from tins.
