SPICY PUMPKIN SOUP
Pumpkin soup is always a winner & this is an extra good version.
2 - 3 tablespoons cooking oil
1 onion, chopped
1 teaspoon ginger and garlic paste
1 small pumpkin (peeled and deseeded)
3-4 cups water, depending on desired thickness
2 teaspoons coriander
1 teaspoon cumin
3/4 teaspoon garam masala
1 vegetable stock cube
Cream to desired taste
Heat cooking oil in a deep bottom saucepan. Add the chopped onion and saute until it changes colour. Add ginger and garlic paste, & cook for a few minutes until the raw smell goes away. Add in the pumpkin pieces & water, and bring to a boil. As it boils, add in the coriander, cumin, and garam masala. Add in the stock cube at this point too. Allow to boil for 20 to 25 minutes covered, or until softened, or in case of a pressure cooker 4 - 5 whistles. Once boiled, blend using a hand blender. Add salt towards the end to adjust according to your taste. Take off the stove, and add in desired amount of cream.
