SPRING GREENS PIZZA
A home-made Spring greens pizza is a delicious way to celebrate fresh garden produce.
Start with your favorite pizza dough as your base. Brush with a layer of olive oil, then make a herby cheese mix to add richness. Mix together ricotta, crushed garlic cloves, chopped herbs of choice, salt and freshly ground black pepper, then slather this on top of the dough. Top with a variety of spring greens such as peas, spinach and thinly sliced zucchini. Dollop on more ricotta, mozzarella or crumbled feta, and sprinkle with black sesame seeds. Bake the pizza until the crust is golden and the cheese is melted and bubbly. Once out of the oven add a finishing touch of fresh herbs like basil or oregano, pesto, rocket and pea shoots, and a drizzle of lemon juice.
