ZUCCHINI FRITTERS

Great alternative use for delicious Zucchini (Courgettes) for brunch or lunch, when you have a surplus.

two grated zucchini
Two eggs
dessert spoon of oil or melted butter
large tablespoon of flour
one teaspoon baking powder
half cup of grated cheese
half teaspoon of cumin
half teaspoon of coriander
finely chopped parsley
finally chopped onion
pinch of cayenne pepper
salt, and pepper

The key is to squeeze out as much moisture as possible from the grated zucchini to ensure a crispy result.

Combine all ingredients to form a thick batter. Heat oil in a skillet and drop spoonfuls of the mixture, flattening them into patties. Fry until golden brown and crispy on both sides.

Serve warm with a dollop of sour cream, Greek yogurt, or a zesty aioli for dipping.
